6 steps to the amazing Gluten-Free Baked Oatmeal Casserole ---


One of Be Cheeri's goals is to eat healthy! We personally believe that the body, mind, and soul is all connected and you need to keep them balanced in order to be happy and healthy! We have been doing a ton of Pinterest history on how to eat healthy but not starve ourselves from fun and yummy treats here and there. Life is too short to not have a taste of something sweet once and a while.. So this is the perfect answer to healthy AND delicious! Here is a short Pinterest inspired tutorial for you all :). Ingredients:
2 cups gluten-free rolled oats
1/3 cup brown sugar 
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup walnut pieces
1 cup mixed frozen berries
1/2 cup milk chocolate chips
2 cups milk
1 large egg
3 tablespoon butter, melted
1 tablespoon vanilla extract
Optional- 1 ripe banana, peeled, 1/2-inch slices

Instructions:

1. Preheat oven to 375F and spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet.

2. In a large bowl, mix together the oats, brown sugar, baking powder, cinnamon, salt, half the walnuts, half the mixed berries, and half the chocolate. ( Save the other half of the berries, nuts and chocolate to decorate the top!)


3. In another large bowl, whisk together the milk, egg, butter, and vanilla extract. 



4. Add the oat mixture to prepared baking dish. Arrange the remaining berries, walnuts, and chocolate on top. 



5. Then pour the milk mixture over everything. Gently shake the baking dish to help the milk mixture go throughout the oats. If you want you can even sprinkle a little extra brown sugar to the top! 


6. Bake 35-40 minutes or until the top is nicely golden brown and the milk mixture has set. EAT UP!
